The potential for industrial processing of sorghums and millet in Africa

The purpose of this paper is to bring to the attention of member states, through this fifth conference of African Ministers of Industry the great potential for industrial processing and utilization of cassava, sorghum and millet in part of full replacement for wheat in basic human food. This potential has been shown through development work over the last several years in such institutions as the Sudan Food Research Centre in co-operation with FAO. Nearly forty African countries are capable of and are producing substantial quantities of other cereals such as sorghum and millet or root crops such as cassava.
