A workshop on Food Preservation and Storage was organized by the Government of the United Republic of Tanzania, with assistance from UNICEF and ECA/FAO, at Kibaha Education Centre from 21 July to 8 August 1975. The 43 participants, largely Regional Secretaries of the Tanzania Women's Association (UWT), examined traditional methods of preserving and storing food in the different regions of the country, and considered how these might be improved, taking into consideration the causes of food spoilage and applying principles of food conservation. The programme included Government policy regarding food production and storage, and the role of the National Milling Corporation in processing, preserving and distributing foods in Tanzania. Much of the workshop was devoted to practical projects. the workshop aimed at equipping the UWT Secretaries and other participants with the knowledge and skills needed to help villagers to conserve surplus foods, to prevent the large losses during storage which diminish stocks of basic crops, and to allow good use to be made of vegetables and fruits plentiful in the peak season and scarce in many regions during the dry months.
